Traditional Japanese sweets (wagashi) are an essential part of Japan’s tea culture.

While many people have experienced preparing maccha,learning to make authentic wagashi is a rare opportunity. In this private class, you will create seasonal daifuku (A soft rice cake filled with sweet bean paste)and elegant nerikiri sweets(A traditional Japanese confection made from white bean paste and glutinous rice, shaped into seasonal designs.)with the confectionery artisan Marie Goto of Okashina Okashiyasan, a specialty sweets maker without a permanent storefront.While wagashi traditionally reflect the seasons, Marie’s creations capture the beauty and changing landscapes of Shonai. Each sweet invites guests to savor the season along with a story of the region.

The lesson features locally grown fruits and other seasonal ingredients, while using ingredients that can also be found back home, allowing you to recreate the sweets at home for family and friends. To conclude the experience, a certified Tsuruoka Food Guide trained in the Japanese tea ceremony will prepare a bowl of maccha for you to enjoy alongside your handmade wagashi.

*During the class, participants will make one type of fruit daifuku.If you would also like to make nerikiri, an additional fee of ¥3,000 per person will apply and must be paid in advance. The menu will vary depending on the season.For example, as shown in the photo, we may make Shine Muscat grape daifuku.
